Yule Cake

Some families have forgotten their fruitcake recipe. They just keep sending the same rock-like structure back and forth as the family gag gift. Send this one, and you won’t get it back for it will be immediately consumed. This recipe is an old family favorite which I pilfered from my mother. Even people who hate fruitcake like this one.
Preheat oven to 300.
1 1/2 c whole Brazil nuts
1 1/2 c walnuts
1 c pitted dates
1/2 c red maraschino cherries
1/2 c green maraschino cherries
1/2 c seedless raisins
3/4 c sifted flour
3/4 c sugar
1/2 tsp salt
1/2 tsp baking powder
1 tsp vanilla
3 eggs

In a very large bowl, mix nuts and fruit. Combine flour, sugar, salt and baking powder, sift over fruit mixture and mix well. Beat eggs until light and fluffy, add vanilla and blend thoroughly into fruit mixture. Pack into a loaf pan which has been greased and bottom lined with wax paper. Bake at 300 for 13/4 to 2 hours, or until firm on top. Cool 10 minutes, loosen edges and turn onto wire rack. Remove wax paper and cool completely. Keep refrigerated.
